This recipe is so dear to my heart. My grandma, Genn Zawacki, is more of a mother than a grandmother to me and quite possibly the best baker on the planet. She is the sweetest and most loving person, not to mention she has a great sense of humor. She is glue that holds our family together and most, if not all, of my happiest childhood memories include my grandma and grandpa. I love her so much and it is with great pleasure that I can share this recipe with you. My grandma traditionally baked these cookies around the holidays and they were always a very special treat for us. The taste of them brings good memories flooding into my mind. Maybe you can start a tradition with your new family too. I hope you enjoy it, and Grandma, if you made it down to Dad's office to see this today .. I love you and I love you too Dad.
Grandma Zawacki's Rum Butter Balls Ingredients:
1 cup of pecans or walnuts
1 cup sifted flour
3 tablespoons of sugar
1/2 cup butter - cut in pieces at room temperature
2 tsp. Rum or Brandy Confectioners Sugar for dusting In Blender:
1. Add flour, nuts, sugar, butter and Rum. Process until blended about 30 seconds. Scrape down with spatula. process again until ball of dough forms on blades, about 15 seconds.
2. Turn out onto lightly floured board. Take a small portion of dough and roll into a rope, about one inch in diameter. Cut into bite sizes and form into balls and place on an ungreased baking sheet.
3. Bake at 325 degrees for 12-15 minutes. Do not let them brown. Let cool for 5 minutes on baking sheet then transfer to wire rack to cool.
4. Put confectioners sugar in a paper bag and coat the cookies. Coat the cookies twice.
